Proper is a scratch kitchen, crafting menu favorites in-house, including stocks, sauces, desserts, and our signature sourdough pizza dough. Our dough rises for three days, creating its unique flavor and texture, before being baked to perfection in an 800-degree wood-fired oven. Each 11-inch pizza is served fresh and cut into eight slices.

Was in Pittsburgh for an overnight and wandered into this place. It was the right choice! Got the Amalfi salad and Pesto Pizza. Both were excellent! Salad was light and fresh and pizza was cooked perfectly. True brick oven pizza is a wonderful thing and this place gets it right. Try it out if your in town.
All of the food was on-point, fresh high quality ingredients and well cooked. Pictured are the calamari, teriyaki wings, and margherita pizza with hot sausage. Great beer selection, including local brews. Would definitely return!
Just happened to walk by and they had me at Brick Oven. The smell of that fire welcomes you at the door. As does the service - really pleasant people. Good tap selection and that pizza was good! The Dough is fresh, the sauce is not too sweet or overwhelming. if I lived here, this would be my home base.
Awesome place for brick oven Pizza in Downtown Pittsburgh! Went here for a date night and we received amazing service and the food was delicious! You can really feel the effort made to ensure everyone has a good experience. Our server did a great job giving recommendations and was super pleasant.
